Why do Pokemon look like they're made out of plastic? Can Gamefreak not into textures?

No they can't. They make incredibly simple textures and rely on smooth models and the lighting to dynamically create the much needed highlights and shadows, but it always comes out looking kind of strange. They actually seem kind of allergic to detailed surfaces in general.

They look like toys because they are created to be toys.
Simple details like fur or scales don't translate good in toys, while round, clear shapes do

I disagree, and even if that were the case you can just make the toys simplified because everyone already expects that, especially for plush. There's no reason for it to not look closer to this.

Jesus Christ no. Both of those games have awful shadow maps, it's fucking disgusting everytime we see Zelda from the front and all shadows are just fucking blots on her face.

Gamefreak's current style isn't ideal, but it's much better at getting shapes out of the 3d models features than BOTW.
