It doesn't HAVE to stay the same type. In Sword, Gordie replaced his mom's Ice-type gym with a Rock-type one, for example.
The fact Bede is forced to become a Fairy-type gym leader despite being a Psychic-type specialist is just to show hard he was mindbroken by the granny.

There are 18 gyms in lore. Gordie didnt replace anything, there simply exists both his and his mom's gyms in circhester. A psychic gym already exists somewhere in Galar, so Bede cant change it from fairy.

I assumed that the active gyms just got a makeover based on whoever was in control of it. Like when Kabu dropped to the minor league, another one of the leaders would have taken over the Motostoke gym.
I assume that's why the 4th and 6th gyms are different between versions, in Sword for example Allister and Melony are stuck in minor league.
