HeartGold/SoulSilver would be a good place to ease you back into the series imo. It's a remake of Gold and Silver, so it shouldn't be too much of a jump for you. Most people consider them to be the peak of the series too, with Black/White and Black/White 2 following.
You could easily play Sword and Shield as well.

All the games are the same doesn't really make a difference which you play first.
Go by release order just cause newer games have better quality of life features so it's hard to go back to older entries.
