People estimate the catch chance for other people, not the host, on Gigantamaxes is around 10% while as the host has a 100% chance. That 100% however only applies to the host if the Gigantamax was found in it's original den through the purple beam, event Gigantamaxes don't apply to that 100% rule for the hosts.

If it makes you feel better, one time when an anon was hosting giga champ raids, I did easily 20 raids and the best I got was 2 shakes. The odds are extremely stacked against people who join to catch these things.

You can kill them before having to fully break the shields but chances are you'll have to go through all of it.

I've been throwing wishing pieces into the den in the circle of rocks at the Lake of Outrage for hours now, resetting if I don't get a pink beam, and still no charizard. I'm doing this because I couldn't get an alcreamie or grimmsnarl to show up at their respective dens either. 5 star raids have two stopping point HP thresholds so you have to get through 2 barriers which can range from 3 layers to 6 layers each. They're very doable with other players but solo'ing them with NPC's can usually be really rough since a lot of the time you'll get dog shit NPC's

You're more or less only doing something half-right. The odds of you only soft resetting for a purple beam and simply hoping it's the Giga mon you want is next to impossible which is why you should be doing the time skip thing. Which is where you select to invite people, change your day forward in the settings, back out of the inviting que and go back in, it cycles the purple beam pokemon to something else. Rinse repeat until you get the giga mon

The worst offenders are easily the Solrock spamming Cosmic Power and Rock Polish all battle or the Wab obviously spamming Counter/Mirror Coat when it never seems to get targeted otherwise yeah you're given a bunch of baby mons that die in one hit and only some of them are sashed anyways

I did the same thing. Safest thing anyone can do is get the Silvally, max out it's EV's/bottle cap anything necessary and just swap out the memories for anything they're fighting. Multi-Attack now has a BP of 120 now too, it got buffed up from 90 if I'm not mistaken
