Im not sure about that, maybe Im just shit but Ive had faints here and there during my regular run. Maybe just lack of caution because it didnt matter, but it could be a challenge. I'd also set a rule to be unable to be higher level than the gym leaders.

Game is build around the use of Exp Share, routes have barely three trainers in them, each with two pokemon.

The game has ten routes so I guess one overworld encounter which you can snipe and one random encounter in grass is fine. I'm not sure about the wild area though, how large pool of pokemon you need to to have a proper nuzlocke?

Either you honor system running into the first overworld Pokemon you see on a given route as your encounter, or you let yourself select your encounter, either a specific overworld Pokemon or trying your luck with a grass encounter. People nuzlocke the Let's Go games with basically that mindset.
