The fact that Eternatus was a large focus at the end of these games makes me feel like there might not be a third game since those usually focus on the third legendary. Maybe they could use that saved time to work on the next main games and make them good. I mean, I know they won't, but it's a novel thought.

Eternatus certainly had more presence than Giratina in DP or Necrozma in SM, but it still wasn't comparable to Giratina in Plat or Necrozma in USM. There's plenty of shit we don't know about Eternatus that they'd be able to expand on in another set of games.
