The Battle Frontier, a postgame side area that has minigames showcasing competitive-level battles, is the big one. A lot of people love this feature and are very disappointed it didn’t return.
There was a side area in the desert called Mirage Tower where you could get the fossils of the game. It was removed, alongside being able to get the other fossil in the postgame.
There is an area called the Trick Master’s House that contains puzzles and mazes you can complete to get items. Some of the puzzles (which I want to say were added in Emerald but am not sure) were cut for ORAS.
A good amount of trainers, gym leaders or otherwise, were either added or modified to be harder in Emerald. These changes were removed for ORAS. Most egregious is one of the gym leaders, who had a decently challenging team of four in Emerald reverted to the piss easy team of two from RS.
The post game opened up a range of Pokémon, largely from Gold and Silver, to be caught in Emerald (mostly in the Safari Zone). These were removed, although to be fair many Pokémon from future generations were added in their place.
Speaking of the Safari Zone, it used to be a mini game where you explore an open area and catch things (with different mechanics) on a timer, but it was changed to a normal route.
You could rematch gym leaders in Emerald and they had several teams (eventually getting as strong as the Champion), although the method to unlocking these fights were stupid and required a ton of waiting around. They aren’t present at all in ORAS.
You could catch all three box legendaries in Emerald, and you can’t in ORAS. One of them had a pretty cool dungeon you had to go through to find it, but the dungeon is gone in ORAS.
Most of the differences are in the main story. I actually think ORAS has more to do postgame sans Frontier, but its main story is worse. But honestly, ORAS are still decent enough games, I think they’re a bit overhated.
