The reason they picked Guyana is because its exotic and out of the way. Anywhere in South America or Africa would be a great candidate for finding some kind of mythical species.

it contradicted almost everything happened in the games except Red beating gyms so the writers didn't even play the games to begin with

That's a good question. On one hand, it would kind of contradict the all-powerful/somewhat omnipresent nature of legendaries, but on the other hand, there have gotten megas and primal forms. I'd guess it's a very real possibility that would be cool to see.
