Emerald is Ruby and Sapphire with both Aqua and Magma being the bad guys. (Fit Rayquaza in.) Steven not being the champ, battle frontier being added and pokemon getting animations in their sprites... along with technical and visual changes.
Platinum is the exact same story as DP except Team Galactic is expanded upon, Cynthia having more of a role and Giratina being shoehorned into the story. (Visual changes like emerald.) Some more pokemon Also Post game is shallow outside of Battle Frontier.
Crystal is literally Gold and Silver with the girl option, rearranged pokemon, sprite animation and a side plot about Suicune.
Besides technical issues, visual updates and small changes, you ARE playing the same game.
Ultra actually has more changes than you give it credit for.
SOS is less annoying.
Rotom is more of a character that gives you neat stuff.
Better bosses.
More pokemon added in for variety and trainers having changed teams because of that. (Often for the better.)
Better post game.
More places to explore on Alola.
More side quests on Alola that are either quirky or expands on the lore.
Alola's lore getting expanded.
Ultra Warp ride.
Mantine surf.
Photo club.
Battle Tree is less of a hell hole.
Trainer animations are better.
A new battle facility
Alola having some visual changes in some of the islands. (Often for the better.)
Along with changes to the story that go a different route.
New pokemon entirely.
Story is the only thing in USUM that is debatable from SM.
Otherwise, USUM is a flat out upgrade from SM.
