Any sprite of Eternatus is going to look awful, it's made of hundreds of geometric parts and was obviously designed with 3D in mind.
The spriter of the OP image actually did a pretty good job all things considered.

Even if they can't get gifs of the models for some reason I'm not sure of, why not just use still images of the models, like what Serebii uses?

They will eventually but they haven't implemented them yet.
They need sprites regardless because there's an option on showdown to use sprites instead of models for those that don't like the 3D look of newer gens.
