I can't tell if some sort of war is going on where one side is trying to irritate the other or something, but the "some say" thing is pretty clearly trying to imply a sort of mythological angle.

With that being said, it's the only clue to Zacian's gender, so looking at it as a female is fine. In the same way you could look at some other constructs as feminine.

Furthermore, do you think any of the Legendary Pokemon we've met thus far have died? If so, which ones? I'm confident that the major legends from Generations 3 through 6 have never once died or needed to reproduce.

Some of the bigger ones are probably meant to be sole existences, like the Weather or Tao trios. But stuff like Solgaleo and Lunala literally produce offspring in front of the mc in USUM, so it's clearly not the case for all of them.
Mew is implied by the pokédex to be a living fossil, so it and some other mons I imagine can't reproduce for gameplay reasons instead of lore ones. Labelling them as gender unknown is just the in-universe explanation for it.

Multiples of which ones? All the box legendaries except Sun and Moon are singles, and most of the rest are. Some people have already posted exceptions in the thread.
There's only one Zacian and it's existed for a very long time. Either it cannot die or it has a ridiculously long natural lifespan. It also has not reproduced, cannot be made to reproduce by the player, and does not register as male or female. Same applies to Kyogre and Zekrom and whatever else.

Honestly I'm not sure the concept of death applies to most of them. The "eternal slumbering" state they are regularly in is probably the closest they can get to that.
Also there's stuff like Xerneas and Yveltal literally going into cycles of death and rebirth, or Zygarde forming itself when it senses a threat to its land.
