Because cofagrigus hits gamefreak's wordfilter so they made a new one that doesn't.
Don't expect cofagrigus to ever appear in a mainline title again for that matter. It's been replaced.

I'm almost 100% certain this is the reason divergent evolutions were created. Unfortunately, GameFreak is very particular about retroactive changes, so Alolan Sandslash is stuck that way

Because Cofagrigus is an evolved Yamask. Runerigus is a painting that absorbed a Yamask in order to animate itself. Galarian Yamask was still a Yamask but possessed.

It's sort of the opposite if they made a regional Paras evo that lost the mushroom.

Regional forms only differ by having different typings, different abilities, and distributing 10-20 stats differently, while Runerigus swaps the Atk and Sp. Atk stat with Cofagrigus, which is a lot more points than 10-20, 45 in fact.
