how can I make swsh actually challenging?

Avoid all trainers and let your waifus reach their final stage once they're level 45.
If Gardevoir, Tsareena and Froslass are part of your team, the late evolution might make the game harder.

Don't over level.

If you don't try to catch every Pokemon in the zones and don't grind ( leave after grabbing all items) you'll be a few levels behind to just a tad ahead, but by the end they will catch up with you. (I did this and at the champion battle I had 57-62)

I had a team of 16 Pokemon that I rotated through for gym challenges, and kept them no higher than the level cap for each gym. I also didn't look up what each gym leader had beforehand, and didn't use revives/healing items during challenges.

It allows you to still use items but makes it so you're usually lower level than your opponents so healing doesn't often help you. SSh makes this pointless in nuzlockes due to truck loads of EXP and it pisses me off.
