Emerald, Platinum and HGSS are the best games in the series, so yeah Emerald is a great starting point.
FRLG, BW and BW2 are also pretty good so if you liked Emerald/Platinum/HGSS you'll probably enjoy those too.
Don't even bother with anything made on the 3DS or Switch since those games suck unless you like toddler-tier difficulty.

Yes because it only gets better from there. Be sure to try FireRed/LeafGreen and HeartGold/SoulSilver too for the best gen 1 and 2 experiences

Gen 3 is a great start in general. With the inclusion on the game cube games and FRLG you can ALMOST complete the full national dex up to that point. Mew and Deoxys will require hacking, while Jirachi and Celebi can be acquired via IRC Pokemon XD GoD

Sure, though I forgot if you need any of the Gamecube games for Emerald or not. I know you needed them for all those Johtomons if you're just using RS and FRLG
