The entire stretch from the start of the game to Mr.Pokemon's house is just retarded in HGSS.

> Start the game
> Go down, mom says go to professor
> Go To professor, get the starter
> Go back to mom for Pokegear
> Go back to professor for his number
> You can get out of the town finaly, while in GSC you get Pokegear immiadiately from mom and professor's number right at the same time you get starter.
Then you have Map/Running shoes old guy that this time is mandatory and "UH-OH HOW DARE YOU TO NOT NOTICE MY BEAUTIFUL HOUSE!" dude.

Also legendary fight being shoved down player's throat with no explaination besides Kimono Girls wanting to be bitches and bully Lugia/Ho-Oh with you as a meatshield. I felt diry seeing it at the first time and it does not help that the 1 vs 7 fight with them is annoying as hec.

Artstyle is better in original GS (though it's less of a HGSS fuck up and moreso just the originals working out so perfectly), though while the protag designs are shit, I think all the gym leader redesigns are fairly well done and updated faithfully to their original.

Also not sure if it counts but HGSS didn't use the vastly improved Crystal wild Pokemon and I don't get why.

I hated how she just keeps stopping you with a forced relationship and all that stuff, and I think her design is a bit dumb. Also, the dialogues are way faster in GSC overall, you don't get as many interruptions as in HGSS.
That being said, I can't complain when stuff like Pokeathlon, Safari Zone, Hoenn/Sinnoh sounds, Gym rematches (although they are extremely annoying to obtain compared to Emerald and Platinum), upgraded E4, legendaries/starters from every region and Physical/Special split are a thing.

I hate HGSS's sprite work. All of it is so goddamn ugly. I hate how caves look like they're just stacked together. I hate the anti-freeze water. I hate how bright it is in caves. I hate that the caves are brown and gray instead of purple.

I really don't like this trend of stopping you constantly that Pokémon started, I liked how you could just skip tutorials on original Gen 2. Replaying B2W2 is painful for me, you can't go from a location to other without Bianca/Hugh/Alder stopping you mid walking.

It's nowhere near as annoying as what you guys are talking about, but I had something similar when I restarted FRLG, actually. I found out that if you go through the first rival battle without pressing the Start button, you get stopped by a girl who reads out the tutorial sign about it to you

GSC's aesthetics are much more relaxing than HGSS's. HGSS has much brighter colours and while most of the remixes are good, a lot of them are too bouncy, like Goldenrod or the intro to Route 29. Also the Kimono Girls are annoying and some of the dialogue is changed to make it sounds less threatening or more kid friendly, so it feels neutered.

The earlier you go the more replayability Pokemon games have if only because you aren't interrupted every 5 minutes and there aren't as many distractions. I do a playthrough of R/B and G/S every year but can't get my self to replay the remakes because it feels like such a slog despite the objective gameplay improvements.

Objectively? The GB Sounds item sounds like total ass. Also, the forced tutorials. And the introduction is horrendously slow and overcomplicated.
Everything else is subjective.
I think the character redesigns are atrocious and I absolutely hate them (although that's a problem with every Pokémon remake; I can't wait to see how they fuck up DP's characters). I don't like a lot of the dialogue rewrites. I don't like most of the music. I feel like Ethan/Lyra are pointless and don't contribute much. I don't like how the legendary battles are mandatory. I don't like how the Kimono Girls are important now. I don't like how they REALLY wanted you to use the touch screen. It kind of feels like they tried too hard, if that makes any sense. And, sure, maybe there isn't as much "soul" as GSC. But that's just my opinion.
Also, I don't care about following Pokémon. At all.
Crystal is a lot easier to get into, and it feels less restrictive, so that's the Johto game I prefer. Although I will admit that HG&SS are better games objectively and there is a lot I like about them.

The only thing I can add to this is that a lot of the remixed tracks are just awful. They completely butchered New Bark and Route 29, for example. There's a lot of unnecessary bits added to the songs.

The only thing I really hate about HGSS is the music. After going back and listening to the old GSC music it feels so fucking odd hearing all of the extra shit they added to it, almost as if 2 tracks are playing at once. It works for the battles, which are supposed to feel fast-paced and intense (especially the Johto Gym Leader theme, which is the best track in the game). It doesn't work when I'm walking in a route enjoying myself. Unfortunately, that's what the bulk of the soundtrack is, so I take issue with it. It has the exact opposite problem as DPP, which has a really laid back soundtracks that makes each route very soothing to venture through, but causes a good amount of the battle themes to sound dull and uninteresting.

Try playing on actual hardware. On real hardware everything doesn't look as saturated, so the walls are more grey, the water looks like a more subtle blue, etc.
