it's actually pretty easy
grimmasnarl usestrick and give at excadrill eject button this item was in gen 7 as well, so you should know it, in case you don't the pokemon with it is switched out when attacked
sylveon uses quick attack to trigger eject button
when switched out, your pokemon lose the dynamax and can't activate it again

This is pretty hilarious, but I'm not sure how practical or reliable it would be. You need to spend two moveslots on Trick and a priority move, you need to predict the Dynamax correctly, and it wouldn't work in all situations, like if there's Psychic Terrain up. Still an interesting strategy though.

But Smogon players did adapt by using Ditto, even before the game was released.
In fact, everyone who voted to ban Dynamax had to play with Dynamax on a fresh account, play 40 games, and have a high enough win:loss ratio against good players
