I've heard that Sun/Moon has a better story than Ultra Sun/Ultra Moon. Why or why not? I'm thinking if playing one of them. Spoil me if necessary, but I want to play the one with a better plot.

It just comes down to taste. The main villain in Gen 7 is more evil in SM while in USUM she's more sympathetic.

It is because the villain actually has a motivation and it has a somber ending. USUM is you want more playable content, and SM if you want story. Cutscenes kill any replayability for SM, but if your concern is the story, then it's the better option.

the story is the same for like three quarters of the game, so you still get tons of set-up for the lusamine plotline
then the whole lusamine thing completely falls away and the new plot is that you have to kill a spooky dragon
then everyone thanks you for literally saving the world, which takes about 5 minutes, then you have to go beat the elite four
