I can't get into the PMD games because in my case it keeps trying to railroad me into the plot while I'm wanting to level up a bit so I wind up severely underleveled.

How does that happen? I don't know about the games past Sky but as long as you spend your free time between story missions doing quests in the highest level dungeons you have available you should be fine.
