That game had pretty simple turn-based combat, but it had characters wandering around the field of battle and having little play-fights with player characters. The turn player would also frequently reposition themselves on their own before attacking.
It was pure window-dressing as far as I remember, but I think having the actual Pokemon move around a quasi-arena instead of being rooted in place would help make things feel more dynamic without actually changing much about the battle or mechanics.
The arena would be invisibly halved or quartered so that nothing would wander too far past their 'zone', as double battles and entry hazards still need to make sense.

Every turn, you can try and move around one of these faces and attack the target on one side.
Most moves attack on the side that the user is already in front of, but certain moves can target certain faces (Dig or Stone Edge can hit the target from below, Rock Throw can hit the target above, Bonemerang attacks the far side, etc).
Some attacks are stronger depending on what direction the user faces, like tail based attacks doing more damage if the user is facing away from the target.
That's probably way too complicated for Pokemon, but that's what I'd do if I had to make a Pokemon knock-off.
