You play video games for the mechanics and the story. You either want to challenge yourself or to experience the story (in a more active way than watching movies/tv shows) or both simultaneously. You do it for the process not for the effect.
Shiny hunting does not require any skill, and is simply a waste of time (unless you do it while doing something else, like chatting on twitch or watching something). It just makes you feel good when you find the shiny like a drug. It's like you were to throw a d20 over and over and get ecstatic whenever it lands on a 20.
