So my Aegislash is max Sp. Attack and 194 EVs in attack, so I ask which stat should I dump the rest of the EVs? Speed or HP?

Max HP and either attack or special attack. Put the rest into defense.
Aegislash has no use for speed and speed is arguably a hindrance for it.

Because it has gargantuan and perfectly equal offensive stats, so you can pick and choose which defensive stat you want to strike on your opponent based on which one you know to be lower

You don't need to invest in, say, atk evs if you pump it with sp.atk evs. It will still hit hard with no investment as long as the nature doesn't lower atk. Quiet is good.
