Kanto is mostly urban and alot of the nature around them has become somewhat polluted and for the most part they seem to take competition much more seriously there.
Johto is very laid back and people are much more respectful of nature, they don't focus as much on the strength but more on the bonds one can have along the adventure. Plus Johto seems clearly like it's in a state of poverty considering how little people pay for losing and how you are going to be tight for cash unless you have the Amulet Coin.
Kanto is the egotistical fat cat and Johto is the poor but happy man.
