Actually, she did have a theme team, but it wasn't a type theme.
Much like Lusamine, she had an 'all cute' team until you got to her ace, which is a part of her backstory.
It is somewhat odd that they would give her such a finely crafted theme team, though.

Who was Lusamine's ace anyways, I feel like it'd be Bewear since it's the new gen Pokemon of her team but it never really struck me as being that related to her character?

You can't, she only gives you Rose's. It was never officially stated that Garbodor was her starter and that she lived in poverty, it was someone's rumour then it just spread like wildfire from there.
