This is pretty neat but it also makes me think they should change how the camera acts in the games, similar to how in A Link Between Worlds they had the camera be able to mimic the view of ALttP I think the PMD series would benefit from implementing that into the games since the view point is the same.

Or they just didn't give a fuck about doing for a GBA spin-off remake :^) You forget, it was made by TPC, they ain't gonna spend any more than exactly what it costs to make the game, especially after getting burned with SMD and Pokkén.

Is this supposed to be a hit against the video creator or SC? If the former, I fail to see how that's an issue with the video creator, it would be SC's fault for making such shitty models that they couldn't animate them the way the original games appeared.

Sure.
The engine handles low-level things like loading data from the hard drive or other physical media, manipulating RAM, and so on. It's also in charge of telling the GPU what to do.
These are complex, technical tasks and it's generally not worth the time for a small team to write an engine from scratch. This is especially true for 3D engines, because 3D rendering is a bitch. This is why so many developers, especially small teams, turn to commercial engines like Unity and Unreal.
Unity happens to be the easiest 3D commercial engine to develop for, and also has a much better license compared to Unreal for small teams.
