Considering Meltan, even though it's classed as "Mythical" only gets 300 BST (Meltan getting the 600 BST most Mthicals do, but not getting an even 100 in every stat like others), I'd say the first stage would have BST comparable to that (or at least the BST of the average 2nd stage 'mon).

Legendaries evolving makes sense if it ties in into their lore nicely, like Type: Null or Meltan (yes I know it's a mythical shut up, you get the idea). I never got the point of Cosmog evolving into Cosmoem and then Solgaleo and Lunala, but I might just be dumb, is it just for story progression reasons?

Cosmog is a larva and Cosmoem is a pupa.
The reason they turn into Solgaleo/Lunala is that they represent outer space and their final forms are the sun and moon.
