Different versions of the same game having a few different locations. White Forest vs Black City, Ancient Opelucid City vs Modern Opelucid City. It adds a lot of soul.

No it doesn't, it's a cheap attempt to make their disgusting business strategy of selling the exact same game seem more substantial than it is.Especially in something like White Forest where you have way more pokemon available than in Black version.
It's incredibly soulless.

I think the game should have 2 completely different versions to justify the existence of 2 games
Something like, game A has different story progression than B, has different villains than B, all gyms are version exclusive, pokemon spread is totally different (100 pokemon exclusive between versions)
Just having different tilesets and NPCs doesn't justify 2 games

They could accomplish the same thing by trying friendship to amie/refresh
The curry adds nothing to the game except a worse minigame than berry blending and poffin baking

The switched gym leaders would have worked well in SnS if the town was themed around them in anyway. Instead it comes off as out of place.

ok this feature wasn't good but you could leave 18 pokémon in there and and set the clock forward and they'd have a stat's EVs maxed out

Just bring back super training
It was fun, an easy way to EV train and had rewards like evolutionary stones
