Having a separate copy of the map means you can do whatever you want on it during the cutscene without having to worry about what's happening on it during gameplay.
Having multiple copies of the models is either a loading optimization or it's so multiple teams can work on different cutscenes at the same time without any risk of stepping on each other's toes.
This shit doesn't happen by accident.
