Why is it ok to criticize the older games' level design, difficulty curve or overall plot yet you can't criticize SWSH for the same reasons?

It's not okay to judge any of those outside of plot. Pokemon has always been a self difficulty game where you can use one of your billions of options to make the game harder if there is an issue about difficulty.
