Dracovish has one good move: Fishious Rend. It has 85 power, but if you go first, it doubles to 170. But it gets STAB, so make that 255. But it also has the Strong Jaw ability and it's a biting move, so make that 382. If you run a Choice Band, make that 573. If it's in the rain, make that 860.
Under the right conditions, it one-shots Toxapex.

Makes Vish hard to switch into unless you have something with water absorb.

Steel, water and fairy are the most OP types. Fairies tend to have low BST and poor STAB moves aside from a few legendaries. Dragon is an OK type but gets fucked by common ice type coverage, they are only common because many dragons have disgustingly high BST and great movepools.

The problem with steel is that it is supposed to be a really busted defensive typing, but also supposed to be a pretty worthless offensive one.
Fairies existing makes it a pretty desirable STAB, so now Steel is SSS tier defensive and B tier offensive, with no real flaws beyond a couple poor synergies with other types.

It's the most UNGA BUNGA Pokemon to ever exist
Fisheous Rend is base 180 if it goes first or if the opposing Pokemon switches.
Fisheous Rend is also boosted by Strong Jaw
So Dracovish hits surprisingly had. Unlike Bolt Beak, only Pokemon with certain abilities are immune to Fisheous Rend.

So yeah, just slap on a Choice Scarf and you basically hit as hard as G-Darmanitan.

Celesteela doesn't actually have OU usate but Koko does. The problem is that they don't seem interested in doing proper tiering for natdex so the teambuilder just lumps together previous gen and current gen tiers.

Yeah, smaller pools of Pokemon constricts teambuilding options. Gen 1 Tauros, Gen 2 Snorlax, LGPE Melmetal, etc.

More options means more stuff to fill niches, and in turn more cause for banning things when they do get out of hand.

Not really. Dracovish is an exercise in how much shit you can do to stack the game in its favor.
You can set up rain, set up tailwind, give it scart to outspeed more things or band to do more damage. It's also a bit of a noob trap because a noob might be tempted to just sweep the whole team with it, rather than save it for the late game for cleanup, which is its real strength.
I'm not saying you need a high IQ to use Dracovish, but it's nowhere near as UNGA BUNGA as something like G-Darm. Literally zero thought or skill involved. At most, you just have to remember type matchups.
