Arceus stole them from our universe because it was curious how we would affect Pokémon after seeing how we tamed animals.
Humans aren't Pokémon, and there is nothing they could have evolved from.
Maybe time isn't linear, so Arceus saw Humans before it even created other Pokémon...That would explain how plants and bacteria evolved there too... It's copying us.
