I don't understand it either, aren't all pokemon of the same evolution supposed to be of the same size?

No. The heights/weights listed in the Pokedex are just the averages for that species. There are NPCs in every game that measure certain Pokemon, and Ash's Shiny Noctowl was shown to be smaller than normal.
