Most "it just gets bigger" complaints totally miss subtle design evolution and changes in the pokemon, there isn't a single pokemon that evolves and "just gets bigger"

It does add variety, but the mistake is where people miss maturity for size increase. You have some pokemon that drastically change and some that add a mature look so that they still retain the base pokemon's theme and identity. That still adds variety in terms of progression through an evolutionary line.
