The data structure for each individual pokemon is roughly similar in the G1/G2 version and the G3 and onward version, but the G1/G2 was far more limited. Like StatExp in G1/G2 is similar in goal to Effort Values, but also very different in that it went up to 65535 with no sum cap, and it was based aroud the base stats of defeated pokemon, or how IVs were a total mess in G1/G2, HP IV not existing and instead being a nonsensical binary calculation based around the four actual IVs, not splitting the Special IV in G2. The data structure as of gen 3 was instead, any not directly a stat data being instead based around an unique ID per pokemon, as well as plenty of unused flags for any possible future data.
As for VC pokemon, they are not exactly one to one between their VC self and transported self. Their IVs are rerolled, StatExp is erased and thus no EVs, gender was random until Gen2 VC games and they are always in basic pokeballs.
