Get every pokemon that's possible in that one game alone and you've achieved the same thing in essence. Other than that literally just do all the content, explore everything, find every item battle every trainer and all the iterations of their rematch teams at least once, and for repeatable content like pokeathelon and BF and world tournament and so on complete it all once.
