Didn't they spend weeks getting lost in forests in Kanto? This would mean that Team Rocket would sometimes be bothering them at least 4 to 5 times a day.

"Technically" it's all part of the same continuity but even if every single episode took only an in-universe day (some of them take two), 3 years would have passed between OS and PM. Just face it: starting from BW, we get soft reboots every once in a while and some events don't make sense.

Gen1 and 2 are about as continuous as it gets. From Gen3 they soft rebooted the timeline over and over again.

Fun Fact: There's an episode where Ash celebrates his 1 year anniversary with Pikachu. So time does indeed flow, but in Gen4 Ash is back again at 10 years old

Some episodes span together to barely make a day. Mainly in the villain arcs.

He's pretty much 10 still during Johto and DP, they just never said anything other than the dub. There was a Pikachu short that added a year but those were never canon.

The timeline is not that fucked actually. Writers remember their OC dunut steel anime-only events and locations and mention them when they have to (with the obvious exception being GS Ball). The most recent example: Lance, despite having totally different looks in the neweset series is still a part of the G-men (International Police of OS and AG).
