Not much has changed about Slowpoke other than its diet, and how its skin has changed coloration due to eating Galarica seeds. Other regional forms either changed where they lived or their behavior.

Kantonian Slowpoke need to eat water-borne Pokemon in order to survive and they do so by fishing in the water. Galarian Slowpoke have no need for that. Also, it is very likely that Galarian Slowbro and Galarian Slowking will end up Psychic/Poison.
