I'll level with you, it's incredibly hard for me to put into words exactly what it is, because I'm batting 1000 on telling true from fakemon leaks on gut instinct. I just seem to be able to tell if something looks like it came from Game Freak or not The quality of the artwork in the leak is another big thing, Game Freak don't let ANY pokémon get seen by outside entities until it's signed off and redrawn officially, meaning they use industry-quality printing or the finalised digital copies to send out to the underlings for promotional/merchandise materials. If the artwork doesn't look like it's professional standard, that's another hit it's not kosher. The fact many fakemon artists don't seem to comprehend the existence of a ruleset (or ignore the fact GF don't use wip- artworks for their reference sheets) means it's incredibly easy for me to tell them apart by eyesight, there's always something off about them.
