I got the sense of all these things in X version. The 3D models just felt off compared to the sprites I was used to, and the game was way too easy, ESPECIALLY with the change to the EXP share. I felt like they could have done something more cool with 3D worlds.

Most would agree with that. Making a game world varied, believable, and memorable is hard and while GF got the variety right, it's pretty much just a straight line from beginning to end. As the last game Junichi Masuda actually directed, it was a massive let down.

Honestly? Not that much.
It's been 6 years and the biggest change the series had was ditching random encounters, and that's something they could have done since the DS.

Uninformed. I actually didn't know he directed those games, in that case, it's even worse than I thought. I generally like the layout of Kanto but when the game is stripped down it means almost nothing.

They just show up in the overworld now. Like you just see a meowth walking around or something and just run up to it.

In Let's Go, they wander around the overworld instead (it's just a basic walking animation with them popping in and out of the ground, don't expect Pokemon Snap) and they added that to gen 8 but it's not exclusively that there.

the lolis, music, ultra beasts, I like the pokemon better then gen 6/8, of course it doesn't have any challenge but I like the presentation of the region

I thought the totems at least were decently challenging, but yeah, the rest of the NPC trainers are piss easy of course, however that statement could be applied to every main series pokemon game so that isn't really saying much
