I always thought animals/insects etc besides Pokemon exist but they generally aren't brought up because they aren't the focus of the story. You can't copyright generic animals, so they will use Pokemon instead whenever possible. They tend to do the same thing with berries but not always.

Regular animals exist in the Pokemon world (although not depicted in-game as focus isnt on them, just like toilets, prisons...etc) and are what humans and Pokemon eat

That only happened in Gen I as Game Freak hadn't decided to wholly seperate the game world form the real world at that stage. This hasn't been true since Gen III at least and put in writing for third-party reps since Gen V.

Pokemon have never been depicted as killing other pokemon to eat them, be it in games or in the anime

This booklet was specifically for 3rd parties making merchandise, if you look at the whole thing it actually contradicts some things that are canon (and were at the time it was printed). It's basically a style guide to make sure these companies who know nothing about Pokemon don't screw up.

Know what I think about it, the Pokemon world must be hunger free, since you can just breed an endless amount of Pokemon you can immediately slaughter after hatching. I imagine factories have Tepigs locked with Dittos permanently in a small room (like how cows are trapped in place being milked irl), their eggs dropped into a conveyor belt which moves them around while providing heat to simulate a trainer carrying them around and once they're born they get chucked into a grinder or slaughtered.

The sausage doesn't necessarily have to be made of pig/cow or some equivalent.
You need to drop your real-life preconceptions and consider which Pokemon would actually make the best livestock.
That is, ones that are extremely common, ones that are large enough to harvest a lot of meat from, and (preferably) ones that are already large in their first stage so that they don't need to battle to reach a large enough size to produce meat. They should also be herbivorous or omnivorous so that you're not using more meat to feed them than you get from slaughtering them.
From this, I conclude that Mudbray is the best meat Pokemon in Galar.
