Reply with something sweet and well wishes for her grandma, don't act desperate or like an asshole about her not reciprocating. Be nice to her and if you're lucky in the future she'll remember how kind you were to her when she was going through a rough moment and that'll give her a better image of you.
She may not see you that way because you still have to get closer or build stronger bonds, but if you treat her right and show her that you're someone who cares and she can rely on, who knows, maybe those feelings develop. I have a friend who initially hated this guy she met because they clashed a lot but once they started actually talking and being nice to each other, they ended up warming up and eventually dated.
