Sinnoh's got a unique thing going for it with it's topography, &c. Some of my ideas are:
Ice/Flying snow owl Hoothoot/Noctowl
Water/Poison swampy Quagsire
Rock Gogoat found in Mt Coronet
Water/Steel Corphish on Iron Island
Bug/Fire Dwebble/Crustle found in Stark Mountain. Adapted to the heat/volcano by inhabiting molten rock.

It would be for Pokemon introduced in Gens 5-8, with some from Gen 1-3 if they weren't originally in Sinnoh.

Considering the games have been including less and less content each time, it wouldn’t surprise me at all if they made a 1:1 remake but removed the post game, thinking they’d put any extra effort in past updating the graphics is hoping for too much these days

I didn't say it was cut content, but there's nothing stopping them from doing that. If they remake D/P and not platinum, they can essentially sell you back the Giratina scenario.
