Zelda influenced Pokemon because you can track certain features of Red and Green back to Zelda.
First of All, Tajiri himself said He saw Miyamoto as a mentor (honestly you don't belong on /vp/ if you don't know the Satoshi/Shigeru stuff), so this should speak for itself already. Then, some characteristics about Zelda 1 (and what it rappresented for its time) can be found in Gen 1, if you think about it.
Zelda 1 has 8 dungeons that Link has to overcome in order to get the pieces of the Triforce and afterward face the Death Mountain and defeat Ganon to win the game.
RBGY has Red who has to overcome 8 gyms in order to get the Gym Badges for entering the League and defeat the Champion to win the game.
Also, Pokémon had an unusual overworld for an rpg back to its time. Most of the Jrpg back then had big OW used mostly to fight monster and enter dungeons/cities, where Pokémon on the contrary had routes that interconnected cities with visable enemies (trainers) and specific level design, something more in line with Zelda where the overworld was maze-like itself and interconnected dungeons instead of being just one big area. Another notable exception for the Overwolrd among jrpgs a the time was, as an example, Seiken Densetsu, which also was initially inspired by Zelda.
Also in Zelda you needed certain items found in some dungeon to browse through further areas in the game like in Pokemon you needed Hidden Machines, usable after a certain Gym Badge is obtained, in order to keep advancing in the World.
