Girafarig and Oranguru are Normal/Psychic because they are basically regular animals (by Pokemon standards) with some extra quirks that make them "Psychic-ish." Girafarig has an extra head (though its brain is very simple) and Oranguru has hyper-intelligence and able to command other Pokemon. Meloetta is primary Normal because it's basically a "sound elemental" and it has a looser connection to Psychic since it swaps it out when it changes forms.
Indeedee is mostly a "true" Psychic but its powers are a bit more limited than a pure Psychic's, since its psychic powers are limited to its horns. This is similar to Pyroar (fiery power is limited to its mane) and Heliolisk (electrical energy is limited to its frill), both of which are secondary Normal.
The real answer is type variety because pure Psychic is played out.
