In Diamond, he wanted Dialga, because whoever rules time, rules the world. Imagine being able to go back on all of your mistakes, to see the future and know exactly the outcome to every single one of your decisions.
On Pearl, he wanted Palkia, because being able to warp space to your will is also a terryfing power. He could wipe entire cities at his command, destroy entire armies without having to move a finger. No community, no society could ever oppose him. Everyone would fear him and would have to agree to everything he says or else it would get annihilated.
On Platinum, Giratina is the supreme ruler of a mirror world of the "pokemon world". As Masuda said (as well as Cynthia stated on HGSS) its supposed to be a personification of the antimatter.
As antimatter can theoretically annihilate any equivalent particle of the world, the result is pretty much similar to having Palkia on your power. As long as you have antimatter, you are able to destroy anything you want. And because the Distortion World is a mirror of the "real world", he would be a supreme ruler of an antimatter world which is able to destroy everything from its mirror by making contact with it. For example, he could take the antimatter equivalent of oxygen from an entire city, and make it flow through a portal from the Distortion world, making the entire population die from asphyxia.
