I think because they're conditioned by other childrens entertainment where protagonist of team leader has a red or fire theme.
The fighting typing helps to rationalize emphasis on cooler martial aspects of the design.

Some people were disappointed Serperior didn’t turn out Grass/Dragon, but it’s predecessor Torterra was Ground/Grass so it’s not too bad
Samurott is preceded by Empoleon (Water/Steel) and Swampert (Water/Ground). All the focus is on whether it’s quadrupedal design is bad
Emboar is the third straight Fire/Fighting starter, and compared to the other two it kinda sucks in battle. Really wore out the typing’s welcome

Monotype starters have existed from the beginning and so are expected from time to time. But to go out of your way to design a starter with a secondary typing to it, and then repeat that exact dual-typing three times in a row also with the same general aesthetic across all three, is off-putting.

Grass and Water can result in literally any design, but Fire/Fighting will always be some masculine humanoid animal which is the worst part about that typing. It's why Incineroar and Cinderace are just as bad despite not being that type combination

Quite simple actually. Starters HAVE to be those types, but don't have to have a secondary fighting type. The fact that they're the exact same doesn't matter when that shared type is water fire or grass. The real issue comes from the secondary, not fixed, type being the same for no reason. One could argue they didn't have to make them monotype but it really doesn't matter, because having a bunch of starters share a mono grass water or fire typing isn't as annoying as having them share their guaranteed type along with another secondary type.

It doesn't matter too much they don't have secondary type. If its not Grass/Fire/Water, it shouldn't be a starter in the first place.

Repeating dualtypes on otherhand is allot worse as having a secondary typing is an attempt at "uniqueness" and repeating it over and over again is nothing but an insult to creativity.

They gave Fighting type to Blaziken and Infernape because in both regions the first gym is a Rock-type, and they don't want little kids their starter to suffer in the beginning, so it gives them an advantage.
Emboar is a different case though, maybe the first gym in Unova was planned to be Normal type, or they already had plans for BW2 when they decided starter types. Doesn't really make sense anyway.
