Sprites aren't inherently superior to models, it's just that the animations aren't as expressive and don't take advantage of dynamic poses as much as the sprites in previous generations. The Stadium/Colosseum games, despite having terrible modeling, were able to make Pokémon seem a lot more lifelike with how characterized the animations, especially idle and death, were. The faded, dead color palettes only accentuate the problem.
That said, I also think GF could make their models at least a bit nicer. Compare the generation 6 games to Pokédex 3D and you'll see something's missing. Generation 8's models also aren't much of a step up, if one at all, from generation 7, despite the original "master" models supposedly being made at a high fidelity for futureproofing.
