The current 18 types cover just about everything; I highly doubt any more will or need to be added. For light, Fairy and/or Electric will do depending on what kind of light.

The only things that aren't covered by the current types are soap, paint, glue, glass and coffee.
(literal) light is already covered by Psychic and Electric while (holy) light is already covered by Fairy.

Also The TCG seems to have combined fairy and psychich, since both act like a "super natural force", light could fit in there also.

Food is subjective as every Pokemon eats different things. Sugar is already Fairy, fruit and vegetables are Grass, etc.
Have it be called Dough instead and only apply it to savory foods that aren't fruit or vegetables.
