Is anyone else concerned about how little GameFreak has revealed about the DLC? Have they shown off everything already?

This. Remember, USUM added:
-5 new Pokemons
-New forms for Necrozma
-Rainbow Rocket
-Ultra Wormholes
-Battle Agency
-Some new Z-Moves.
-Mantine Surf

And now the DLC is adding:
-11 new monsters, 12 if you count Zarude
-5 new Gigamax forms
- Two new Wild Areas
- The Restricted Sparring Towers and whatever is the Battle Challenge from Crown Tundra that the trailer mentioned
- New moves from Move Tutors
-Some kind of co-op exploration for Crown Tundra

In other words, what we know is already pretty much the equivalent to what USUM added to SM, so we can safely assume we already know everything.

Yeah, expecting new gameplay stuff from this DLC is naive.

It's just the shitty legendary shillmon quest, Gigantamax starters and a Wild Area-like location where you can catch the restored Pokemon (well, some of them, since they want you to use Home).

Gameplay-wise it's all one big nothing.

Considering the sales numbers, there really isn’t much of a reason for GF to actually try on future games.

They put out a broken, unbalanced, cut up for dlc, bare minimum game and it still received critical acclaim and high sales. Depending on how well the DLC sells will set a precedent on how bad it’ll be in future games as well. At this point I’ve pretty much taken the blackpill on the series.

You know they haven't.
Look at the SWSH pre-release news period. More than 75% of its contents were deliberately hidden from the public. We only had 4 regional forms revealed (2 if the currently teased Slowbro and Slowking count). We only had 5 new Pokemon revealed (6 if Zarude counts). We only have 7 Gigantamax revealed (since both Urshifu Gigantamax are separate ones). Since this region's gimmick are evolutions exclusive to regional forms, we could very well have more unrevealed regional forms that evolve into new Pokemon. Even if none of that happens, we know for a fact there are over 150 Pokemon that are going to be in the DLC that have not been shown off yet. We also don't know what new tutor moves or moves will be present, either.

Also, bear in mind COVID-19 may potentially cause the DLC to be delayed. In an alternate reality in which COVID-19 doesn't exist, we probably would have known more about the DLC by now. Game Freak had a small enough staff to work on the DLC as it is, and they are all stuck at home due to COVID.

Since they are doing separate Gigantamax forms for both Urshifu does anyone think there is some hope for a separate Flapple/Appletun and Low Key/Amped Toxtricity to get different forms/looks to distuinguish them?

To be Honest, Giga Appletun /Flapple looks more like a middle form in between than an evolution for Any of them. They could've made a Red and Green Apple tor Flapple/Appletun with distant Giga forms (who looked like actual Flapple/Appleton) with maybe Flapple being a Bug/Dragon to distuinguish it more.

The point with Flapple and Appletun is that they are the same Pokemon (the worm-like dragon) that evolved into a different shape because of the apple that it went into. So they should have kept the same typing, with their stats, moves, and abilities being different. Gigantamax Flapple/Appletun were specifically created for the gimmick of two Pokemon sharing the same Gigantamax appearance, but being different in everything else.
