Piplup and Fennekin line come to mind

can’t think of anything else that makes me feel this way. I usually only like the final or initial evo for most ‘mons.

Off the top of my head: Honedge, Magnemite, Diglett (Kantonian and Alolan), Baltoy, Drowzee, Voltorb, Bellsprout, Petilil, Yamask (Unovan and Galarian), Gastly, Abra, Geodude (only Kantonian; A-Golem is cool, but the others in the Alolan line suck), Roggenrola, Zubat, and Klink.

I actually love quite a few lines, but pic related will always be my bro, I love the design process through the line as well, think it makes an awesome example for what Pokémon is.

This is a great one too. Poliwhirl -> Poliwrath is definitely an odd evolution, but it's such a solid design that it doesn't matter that it doesn't change all that much.

I say this all the time, but I think Bulbasaur is the perfect evolutionary line, because each evolution looks like the logical next step. They avoid 'just getting bigger' with how the flower grows more complex and are different enough to be easily recognizable. Bulbasaur is not my favorite starter (though it's up there), but I don't think any other evolutionary line even outside of starters is that good in the internal logic.

Having one "wing" on it's head also made more sense
It was never a wing growth, just hair stylized as one. The evos do the same thing but resemble a weapon and body armor instead
