How come whenever someone is talking about fixing Pokemon it's directed at Gamefreak or Nintendo but never Creatures?

Because Creatures had no input into the series creatively, they loaned Game Freak money to make Red/Green is all. And looking at what they DID do, I'm glad it remains that way.

Well considering the gripes people have with the models, sounds like perhaps Creatures should be getting some of the flak Gamefreak is receiving.

The models in the 3DS era were actually very well made, in fact they were too good that the framerate on the 3DS kept dropping. People defended TPC by saying they deliberately made future proof models so that all Pokémon would appear in future games.
Obviously you can see that didn't go well with SwSh

Exactly the models themselves aren’t the problem as things like Pokemon Ga ole showed how good the models actually are when given actual proper animations instead of having all of them basically use almost the same boring swaying/ t pose flying animations.
